And which bill of character… " Script" ? Normal and Italic. Thanks for announcing it to me,

Well, in fact, i already realized e few projects, reading using Adobe Reader, but this time, it's a different one.
I have several old books, written on specific appropriated vellum paper, and there's one of them, i decided to "rewrite" ?, but readable on a computer, (using Adobe Reader ?).
I'm talking about a book which was written sometime after 1382 !...using very old french language ! (Writer unknow !)
They even mention the battle of Roodebeke (Brussels)
I already scanned 32 illustrations included, corrected all of them, and now... how to start ,
Because i don't need a cover page, should i start InDesign using "single" pages, or do i need dual pages, side by side ?
If i use signe pages, (as i do usally) Adobe Reader can be programmed to open the pages side by side, right ?
That's my first question ;-)
Now, about the characters !
There are thousands and thousands Font names, but 90% are the same, except the name !
I have them all (almost !) but i'm not able to find an appropriated one.
I would like to use something like a Script character, but they all simple, NO other optionnal items like "Regular" "Bold" ...
I only find fonts like: Vivaldi :: Sanvito Pro :: Caflisch Script Pro :: all Italic but nothing else ! Monotype Cosiva :: Pristina...
I started writing using "Open type: Garamond Premier Pro" which has every item you want , but it's not an appropriated font.
Any idea ?

There is nothing wrong with posting in French, you just didn't seem to be attracting an answer, and I'm not a reader of that language.
I would probably set up the book as facing pages. If you start numbering the pages with an even number you'll elimiate the single cover page. When you export to PDF you'd have the option (when export to a PRINT flavored PDF from CS5 or any PDF from earlier versions) of checking the spreads box, but I wouldn't do that, myself, since as you point out, you can set the PDF to open as spreads and then let the reader decide if they want to keep it that way. In CS5 if you export to PDF (Interactive) you automatically get spreads unless you run a script to turn them off. See Interactive PDF from InDesign CS5 Always Has Spreads On | InDesignSecrets.
A word of caution about using a script font. Large blocks of text in script are harder to read than they would be in a Roman face, and as you've discovered there are not a lot of script fonts with more than one weight, making it more difficult add empahsis (you might experiment with something like adding a blackletter font for places you would have used italics, but if this is an old manuscript, you should take a cue form the original). If you are not deterred from using a script font, look at Bickham Script Pro. It has three weights and contextual alternates which makes it look a bit more like handwriting than the average script. The Zapfino family might also be suitable, but again, harder to read in long text passages.

So, can you please tell me what's really different (and interresting !) between CS4 and CS5 ?
