Shopping Cart Question

I am completely new to creating a shopping cart. I have a couple of
extensions for pre done shopping carts, but want to learn it manually.

I can create a database, list all the items, do the search page, etc. The
only part I am missing is how to create the virtual 'shopping cart' to
'hold' the items until checkout.

What kind of variable do you use to actually 'hold' each item throughout the
shopping experience? How does it work? How do you create multiple variables
for all the items that they wish to purchase temporarily.

Is there anything out there that can teach you how (theory and practice) to
create a shopping cart.
