          Ok. Why is the image richer when the black channel only is on than when they're all on?

       

      ..the histogram is different too...

          When they are all on you are viewing a composite CMYK image so the conversion back to RGB is made via the CMYK profile. You don't have any CMY so the profile returns a less than absolute black, which is what would happen on press. Try assigning different profiles and the composite image will be more or less rich. When you view an individual channel the profile has no effect.
