I will follow with our documentation team to see if there is any other alternative or if I am missing something.

We are looking for something that will allow us to print and use documentation for custom development of forms and workflows. For example we would like to be able to start development and take the document containing object properties for a form or process map that we develop and review it with a customer then use it to gather more information about requirements that still need to be developed and enhanced.

This sounds like a problem you can solve with a designer macro.
I have a sample macro that will summarize properties for all objects on a form.
You could customize the macro so that it reported only on selected objects

You might want to consider using Avoka's SmartForm Composer to generate your XFA PDF Forms as it has a facility called the "bulk editor" which can show any property of any field, it also provides an export to XLS facility for external review.
