Why not the i7-2700K? It is only marginally more expensive but has the better clock speed.
Consider a P8Z68 mobo or similar from other brands because of the SRT support. What will your disk setup look like? The 560 Ti looks good. If you intend to overclock, as you stated, I would not skimp on this. What gold label PSU do you have in mind? Something in the 850W range?

Unfortunately, Harm, at Newegg (the OP's reference), the i7-2700K is actually significantly more expensive at $370 versus $320 for the i7-2600K. The 100MHz increase in the clock speed is definitely not worth the extra $50, IMHO. It is worth no more than $10 extra, IMHO.
Maybe in your area, where the 2700K is only about €10 more expensive than the 2600K. But not in the US, where the next higher step is a whopping $50 more.
As for the motherboard, I agree with you. The P67 is now a bit outdated, and will be the very last of the mainstream P-series chipsets without IGP support. All enthusiast-mainstream chipsets will be Z-series chipsets from now on.
The memory that the OP will be getting will actually be two kits of the G.SKILL dual-channel 8GB kit. Two 8GB kits total 16GB (hence, 4 x 4GB). That's the exact memory that I'm currently running on my current main editing rig although I had to downclock the memory to DDR3-1333 in order for the two 8GB kits combined to run stably on my system (at least with the current installation of Windows 7 Pro that has seen its share of hardware upgrades in the year and a half since it was first installed on another Intel-based system. Maybe it's time for me to wipe out the old Windows installation and reinstall Windows on my system from scratch?

To clarify, that's two sets of 2x4GB sticks... 4x4GB (16GB) total.
Planning on a 2600k over a 2700k for the price difference ($279.99 vs $369.99, Microcenter prices). Seemed like a marginal difference in clock speed for the price? Also, the last time I bought “the latest” processor I ran into incompatibility issues, so I'm leaning toward the one that's been available longer with a proven track record.
Any experience with this motherboard? Will the onboard video cause conflicts with the 560Ti?

I'll wait on hard drives to see if the prices come back down. Currently using 7200 RPM Seagate drives - 1TB for OS, 1.5TB internal for media, 1.5TB e-SATA as needed.
Are hard drives the only component that had a recent price hike? Should I wait a few more months on everything else, too?

As far as the Z68 boards are concerned, you can turn off the onboard video in the EFI BIOS setup. Some very-high-end Z68 boards have no video out and thus have their onboard video disabled.
