Hey Jason! I don't have an answer as to converting the output from SCORM 2004 to SCORM 1.2. I guess you'd have to go in and manually change all of your variables and such. Not something I've ever tried to do. It would be a good recomendation for Adobe to allow you to choose the version since so many people are on SCORM 1.2. But I will add that our LMS is SCORM 2004 compatible, and I had no problems converting and uploading a quiz. The SCORM 2004 works beautifully. We've got SumTotal Maestro (formerly Geo Learning).
It appears Adobe has moved onto the Captivate 6 Beta release where this issue has been fixed. If you need to sign up to test their beta software, I'd start here: https://www.adobe.com/cfusion/mmform/index.cfm?name=prerelease_interest
