Hitting the enter key will hide the path from view.

However, 98% of the time I am working with a shape layer I am just transforming, moving or filling it with a different color, and during those times I have something other than the shape layer tool selected so those options do not appear.
I greatly appreciate all the new vector features and options but for my day-to-day working these two changes are unacceptable to me.

Because it is no longer just a fill color, the shape has a fill (color, gradient, or pattern) and stroke (color, gradient or pattern).
As Mike said: these are visible in the vector tools' option bar.
Yes, they do work differently and it will take some time to adjust to the changes.
