You can add the following registry key to the machine with Reader:
Disabling all hosted services through registry
bEnableAcrobatHS (dword : 0) at HKCU\Software\Adobe\Acrobat Reader\10.0\Workflows
you need to add Workflows key manually.
if this is for a Reader deployment you can generate a mst file using the Customization wizard.

Looking for same sort of answer, but more on the lines of tagging the document to tell Reader not to display the Sign feature.
We will not have control over people's machines or Reader installations.
If you apply security to the document the EchoSign functionality won't be available for use with the file. You can do this with Acrobat.
I'm having the same problem. And I don't know why EchoSign is even being detected -- there are No references to 'Sign' or 'Signature' in the Form i created in Acrobat... I also don't want to apply security to the document. Advice?
