You cannot 'avoid' the cover sheet as it's the core of the entire document (a PDF Portfolio is in effect a cover sheet with a bunch of attachments) - but you can edit it post-creation, for example to include a company branded version. On the menu choose Vew > Portfolio > Cover Sheet, then replace the page with one from another PDF file (using the menu on the page thumbnails sidebar, taking care to retain the link to the Adobe website).

I tried, and the suggestion to edit an own cover sheet works.
This has to be done for every single portfolio.
I want to replace the standard cover sheet once for ever. There is certainly a way to do it and hopefully you can tell how.

For Portfolios created in Acrobat, you can replace the cover sheet file in the installation folder:
Program Files\Adobe\Acrobat 10.0\Acrobat\DocSettings\CombineFiles\(language)\coversheet.pdf
Keep a backup of the original as if you damage it you'll have to reinstall. The (language) folder name depends on your Acrobat installation (ENU, FRA, DEU, etc.) not on the language of the PDF file you're creating.
