The Preview in Encore is but an emulation, and not the best possible.
Now, with a workflow, starting with HD, and going to SD, i.e. down-rezzing, Jeff Bellune's TUTORIAL might be helpful for ultimate quality. Do not think that he's updated it for CS 6, so we might wait for him to weigh in.

Go to Preferences->General and change the Playback Quality to High.
By default in CS6, it is kept automatic which sometime might lead to a bad playback quality in order to simulate a real time playback without any dropped frame.
This preference will improve your plaback quality but this might not be the best result.

However, in the meantime I discovered that the Encore preferences dd not have selected "GPU Accelerated" for previews. When I selected that, the quality of the previews in the monitor increased significantly.
