You can find the PDFs for CS5 and other earlier versions by going to the Previous Versions pages for a product. Here are direct links to some of the pages:
UPDATE (8/16) There isn't an archive page for Acrobat because you can access PDF files right from the online help. Here's the link to the latest Acrobat Help in French. Click the PDF link on the top right of the page to download a PDF file.
By the way, I noticed that some of these French pages were missing (Flash and Fireworks) so I'll make sure they get sorted.

Yes, I've noticed that some of those links where directing me whether to an english version and/or nowhere, effectively!
May i also point out why some French files in ".pdf" whre some kind of hard to find is because some name's titles are varying from one application to the other in French. So, it becomes teidous and laborious to look for on the Web and even on Adobe's Web Site some time. That is also why I especially appreciate your precious time on it for me.
