Does the application launch correctly when launched from Start > All programs > ?
If it does then all you have to do is go to the properties and customize the icon displayed.
If it launches Photoshop and not the application itself, then right click and got to the properties option and select the respective applications to launch and set as default.

However, that wasn't the issue I was having.
If anybody else has run into this issue, here is the work around I used to fix it.
Go to C:/Program Files (x86)/Adobe/Acrobat 10.0/Acrobat.
Create shortcuts of Acrobat.exe and acrodist.exe -- a warning will pop up prompting you to create them on the desktop as they cannot be created in the same folder. Say yes.
These shortcuts should have the correct icon.
Drag the new shortcut links to Start > All Programs
Now rename them Adobe Acrobat X Pro and Adobe Acrobat Distiller X respectively.
They should automatically merge with the incorrect icon shortcuts.
Voila!

Incorrect icons were also displayed for open PDF documents in the Taskbar. Now they're showing correctly.
