Basically, what just happened to me was the PDF was using some weird version of Arial which I didn't have installed. I tried editing in Acrobat but because of that it threw up flags. So I dropped into Illustrator, did the above deal and then just deleted that one line and re-typeset in InDesign.

This can also be done within Acrobat: Flatten transparency with Convert Type to Outlines toggled on, then Save As a new PDF, then Embed-Place the new PDF in Illustrator. It's a functionally identical process, although yours is superior because it requires fewer steps.
While Tom is right that you can't edit the text (because it isn't live), you certainly can, for example, include artwork from another party that would otherwise lose its typographic appearance.
