I have a formatted ebook which is in doc, but I seem to be able to download/copy it as a webpage. Can Adobe Digital editions copy the file as a 'doc' file?

I'm not sure exactly what you are asking, but I'm pretty sure the answer is NO.

Adobe Digital Editions can only handle .epub and .pdf files.

It can handle unencrypted files, and Adobe ADEPT DRM encrypted files.

It can also use .acsm files for downloading encrypted .epub and .pdf files.
