Can I pause, a presentation until a specific key is pressed

I am using V7 of Captivate.

Is it possible have your presentation pause until user presses a defined key, such as "G" on the keyboard to initiate play?

There certainly is. If the presentation is paused, it's likely pausing with a Click Box or a Button. Just assign G as the shortcut. (Look in the properties panel where you assign the action, There, you will find a field labeled Shortcut. Click in the box and it will turn blue. Then press the G key to assign it.)
