DV AVI (Windows name, I think MOV is equivalent) is about 13Gig per hour of video

Biggles Lamb Jan 1, 2014 4:12 AM (in response to John T Smith)What John has linked you to works. I have one of their ADVC products, input video from s.video, composite or component and it outputs via FireWire.
If your Mac has a FireWire input then you can capture in Premiere
Alternatively buy a DV camcorder on eBay that has a working recording input and use that as a feed through, an old Sony PC100 that I used to have enabled this function, it's. FireWire output being captured in Premiere

What I actually need help with is figuring out where in the program I am able to import from the media converter source and then what good settings are.

In Premiere go to file > capture
The capture window should then present itself and as long as your mac has the correct device drivers, you should then see the Sony as the source device

Steven L. Gotz Jan 1, 2014 4:02 PM (in response to Biggles Lamb)As Biggles says, the capture window should work. You will have to set the camera to generic because the program will not recognize your device, but it should capture for you, even tough you will have to start and stop manually.

I'm trying it now and it appears to be working. Do you have any other recommendations for capturing from hi8 video source as far as setting go? I am using DV to capture. Are there any other settings I should pay attention to?
There is an extra line of video noise at the bottom, but when I google it, it sounds like it won't show on most standard tvs and if I want to fix it for online, that I should mask it after the fact vs scaling up the video.

Steven L. Gotz Jan 3, 2014 6:34 AM (in response to TheHausOfMarsian)It sounds like you have it right. Just ignore the noise until the end and then mask it. Or, for playback now and then, create a new sequence and drop you main sequence into it like a clip. Mask that. Then after playing it, go back to editing in the main sequence again. That way the noise will not bother you as you review your work, but the mask won't slow you down during editing.

Bill Hunt Jan 3, 2014 9:32 AM (in response to Steven L. Gotz)Also, a tiny bit of Effect>Motion>Scale (Scale UP just a bit), and then Effect>Motion>Position (Position that Scaled Video, down, so that the line of video noise is effectively cropped off) will work too, and give you a full, clean Frame.

TheHausOfMarsian Jan 3, 2014 10:14 AM (in response to Bill Hunt)I noticed that all of the Hi8 captures are having toothy interlaced effects (especially on diagonal lines or motion).
Is this something I can correct through Premiere through the capture process or is it something that I have to do after?
Or is it not correctable at all?
I've done some googling but did not see anything premiere-specific about correcting that.

I captured all my DV tapes onto my PC about five years ago, some of them have the same effect but are OK outputted
