You need to click on one of the gradient stops and then use the color panel to set the color.
You also can't make a gradient stop transparent in that version. Use an opacity mask instead.
You should also take a look at the manual. You'll find all the techniques with screenshots there.

Canned Pug Feb 22, 2014 1:51 PM (in response to Monika Gause)Yes, it is CS3, so you can see how hopelessly out of step I am, as I rarely use Ai. I am working on the opacity mask now.
I tried looking in the Help section of the software which is the same as the pdf you suggest but couldn't narrow it down to get the right question, let alone right answer.
