That depends.
Are you working in RGB color mode? Then embed profiles.
Are you working in CMYK color mode AND have you selected colors based on printed samples according to the printing process? Then embedding profiles might even be dangerous and cause CMYK-CMYK-conversions (in case the InDesign export is set up in a specific way).

Mylenium has also kindly replied that I should embed the ICC color profiles. So I'm still unsure about the process. I'm working in CMYK creating color illustrations that will be exported to the Blurb InDesign Book Template for printing. And then the book will also be converted to an ebook by Blurb.
I won't be selecting colors based on printed samples, but selecting colors in Illustrator that will be printed by Blurb's printing process. The InDesign template is set up for Blurb's printing process.
I contacted Blurb hopeing that they would answer this question, but they were unable to help.

I don't know how that template is set up.
Selecting colors for print just based on their appearance on screen might not be a good idea, because the print might look differently than you expect.
The question of embedding or not embedding the profile might not matter anyway, since your color might drift because of other reasons.
You need printed samples.
You need more information on the printing process.
Otherwise it won't matter anyway if you embed the profile or not.

BAD practice if you have already done your job in CMYK.
The profiles are to ensure that RGB converts correctly to CMYK.
I have witnessed how profiles embedded in CMYK files can produce a colour cast, thereby ruining artwork that was otherwise perfect.
