Assuming Captivate 3 trial doesn't change the playing field here, the answer is that yes you may continue to use the project you create using the trial. The main thing folks miss is that if you look at the Project settings, the trial configures an expiration date for anything created using the trial. In the trial mode, you are prevented from turning this off. But once you graduate to the paid full version, the option is enabled and you must visit this area to turn off the expiration for what you created with the trial.
