New folder

If you want to view and edit the contents of an existing folder on disk -- a different folder than the default Getting Started project -- just use File > Open Folder to choose a folder.  This will close the Getting Started project folder and switch to the new folder you selected.  You can switch back to a previously opened folder by clicking the folder name in the sidebar, which opens a dropdown of recently-used project folders.
