You may Click with the Scissors Tool where you wish to cut.

M_Moyle Oct 21, 2014 8:35 AM (in response to Jacob Bugge)Thanks, Jacob. That certainly will work; unfortunately, it's just not as quick and precise as Option-dragging the knife to get a straight cut across an object or, more importantly, across multiple objects.
Ah, well -- when they finally replaced my old G5 at work last year, I knew it was going to mean giving up Freehand and learning the Adobe way of doing things. After predominantly doing illustrations in Freehand since the Aldus days, though -- somewhere around 25 years ago, now -- it's difficult having to learn a whole new set of reflexes!

You may create closed path and then open them again, the latter by ClickDragging across the unwanted new path segment(s) with the Direct Selection Tool and pressing the Delete key once (avoid dragging over Anchor Points).
Another way of cutting the lot is to ClickShiftDrag (Shift for specific angles, otherwise just ClickDrag) with the Line Segmant Tool, then Object>Path>Divide Objects Below.

Unfortunately, while there are numerous ways to divide a closed object into other closed objects. it appears that there is no solution for cutting a closed object into two open objects that doesn't involve more steps than "option-slice and done".
As I said, I guess I just need to learn new habits. It just seems bizarre to me that the simplest option is not even available.
