If you have backups of the Lightroom catalogs and photos, then there should be no problem. Simply copy the backups of catalog files and photos to their original locations. No importing is necessary ... in fact importing is the wrong thing to do if you have your catalog file backups.
If you don't have backups of your catalog file ... well ... that's a bad situation. You have to import the photos. Depending on what options you turned on in Lightroom (or didn't turn on), you may lose your edits and user-supplied metadata when you import.

Trouble is I have lost Lightroom, and Photoshop.
I’m worried that all this items being transferred to my desktop will be photos which are no longer in folders. Can you reassure me please!
No, I can't reassure you. I can't see what your folders contain, I don't know what backups you (or the Apple people) have made.
If you have the proper backups, there should be no problem. If you don't, most likely there will be problems.
If it isn't obvious already, in the future you need to make regular and automated backups of your catalog file and of your photos and these backups MUST be on a different physical disk, so if one disk crashes, it's a simple matter of replacing the crashed disk and then copying the backups to their original locations.
