Editing text changes formatting - cursor doesn't fit the text

When trying to edit text, I have followed all the steps from the tutorial, but they appear to be working completely differently on my trial. I click on the relevant box, but the cursor floats over the text rather than next to it. I can't actually delete and type in the same line I am trying to, it adds another layer simliarly to how photoshop does. Not only that, but any edit affects the formatting. Any edit - text, paragraphing, etc - causes the text to overflow the page boundary, meaning only some of it is visible.

I can't for the life of me work out why or how this is happening, but if anyone out there has an idea I'd be very grateful!
