Can I Trigger Only 3 Things With Mouth?

It appears that there are only three things that can be triggered with the Mouth Tag...via the camera.. Neutral, Smile and Surprise, is this right?

For the Face behavior, yes. For the Nutcracker Jaw behavior, if you use the Jaw handle tag, that would also move the jaw based on the camera.

Is the Nutcracker basically a handle placed on chin image, so when my chin moves and the Tracking Dots pick this up, the image of the chin goes up and down too? What Tracking Dots does it use?

Yeah, as you make your mouth taller (from rest size; i.e., a measure of the mouth's height), it offsets the Chin handle tag. The Flappiness parameter controls the offset.
