In Edit PDF in Acrobat Pro DC when I try and add, change or delete a character it changes the margin (indents it) which causes overlapping text at the bottom.

How do I keep that from happening?

Editing a PDF in such a way is risky and can cause all kinds of problems.

One thing you can try is to make the text box wider before editing it, or move it away from the page's edge, and then move it back.
