I am working with a large InDesign document which contains many linked PSD an AI images. Is there a way to export the InDesign document as an interactive PDF so that all of the PSD and AI files are converted to JPGs on export, and are all resized the same?

When exporting to interactive PDF out of InDesign, you don't have as many options available to control image output. That being said, in the Export to Interactive PDF dialog box, you can click on the Compression tab on the left side of the dialog box and control the Compression, Quality, and Resolution of the images when the PDF is generated. As UpStyleDesign had mentioned previously, only raster-based images will be affected by this setting.

I assume you are talking about image resolution on exporting a PDF. This will affect the PSD files, so no matter what higher resolution they had, they will be downsized to the size you set in the export options. AI files are going to be vector so will not be affected as vector is resolution independent.

That is not necessarily true. For instance. If the PSDs have a resolution 400 ppi but the option call for downsampling images more than 450 to 300, those images will not be downsampled.

AI files are actually PDFs and may contain raster and vector objects.

You're right Bob but the OP did say he was exporting to Interactive PDF so the "for images above" property doesn't really apply here.

Do you really need the interactive PDF or are you just trying to get all of the placed assets out of the pagelayout as JPEGS at a set resolution?

You can force vector art to rasterize when you export a print PDF, but it's going to get sliced.
