Background/Text Colors vs Viewer Options

I noticed that some epub display devices allow users to change the background color to black and the text color to white. I think some viewers may allow three or four options.

I just wondered how these viewing options interact with custom background and text colors. For example, suppose I have a regular epub, with white pages and black text, but I have certain paragraphs contained in div's styled for a yellow background and red text. If the viewer changes the display to a black background, will my custom settings remain unchanged?

Conversely, if I wanted the custom settings to change, could that be done somehow? For example, if someone decides to view an epub with a black background, then my yellow boxes with white text might change to red boxes with white text. Can that be done with CSS?
