Can anyone explain to me how to not have the type 'cut off' as this cool effect happens? As the text is distorted outside of the original type box, it disappears. I want the box to be larger to accommodate the distorted type!

You could precompose the text layer, then apply the effect to the precomp.

As Dave correctly said - pre-compose and do not turn on Collapse Transformations. There are many effects that are limited to layer bounds. Text layers are only as big as a rectangle that includes the visible text.
The only other viable option is to select the text layer then choose Layer>Create Shapes from Text from the menu, then select the text layer and the Rectangle tool (q) and double click the rectangle to add a comp sized rectangle to the shape layer. You then set the fill and stroke to none and your effect will work as expected and the text layer, which is not a shape layer, will remain vector based allowing you more options.

completely worked! I should have thought of that but was stuck in an idea that there would be a setting to expand the text box! Thanks so much. Jen
