What is the easiest way to add a signature and copyright symbol to my photos?
As has been said - this is easier in Lightroom.
In Photoshop, to get your name just add a Text layer and type in the information you want.
To get the © symbol in Windows , use the Windows Character Map
Once done you can easily add as an action
Note : If you actually want your real signature, as opposed to your name in text, either sign on a new layer with a tablet&pen or scan it.

Lightroom has a watermark option on export.

Alright. I'll move this thread out of The Lounge​ and into a Photoshop forum.
That being said, this would be very easy to do to a bunch of Photos in Lightroom. If you have a CC subscription, you may have access to Lightroom.

Use the type tool and turn it into a brush. Alt+0169 = ©

Okay if easier in Lr then how? I have a photo signature and I have the graphic imported into Lr. The only way that I have figured out how to get it on my photos is via the PRINT option. However once the photo is saved the signature logo is not. I have photos that I was to digitally email to someone or upload to a social media account but I can't figure out how to keep the signature logo on the photo when not in the PRINT screen in Lr. Help :{

In Lightroom go to File Export
Create an export template and include the watermark (choose Edit Watermark).
Once created save that as an Export Preset, using the Add button at the bottom left, and use that to export a copy of your image(s) complete with watermark
