I dont see the "More Option" editing functions for text in my window.

I am trying to animate text and I have done this before but this time I can't see any of the editing functions.

I should see something like this

But I see this:

I don't see any of the options to change or adjust those settings.

Check your column headers in the timeline. The effects options require the AV column to be visible. A right-click on the header region is your friend.

It could also be 'modes'. If Both 'modes' & 'switches' are turned off those menus disappear.  If either is turned on you should see them.  Pretty sure AV has nothing to do with it.
