During recent updates, my default settings have somehow changed.
Now when I create a text box, the default text color is white instead of black, and when I place or create any object, it has a text wrap that I have to go back and clear.
How can I change these and other default settings?

If this is impacting all new files, a quick option is to trash preferences:

But to answer your question on setting defaults:
To set the defaults in a single document, first deselect everything, then update the command. For example, to disable the text wrap default for one file, deselect everything, choose Window > Text Wrap and turn it off. It will be off as a default for that one document.
To set defaults for all new documents, close all open files and update the command. For example, to disable the text wrap default for all new documents, close all open files, choose Window > Text Wrap and turn it off. It will be off as a default for all new documents.
