When I try to edit the PDF file, all text is in text boxes, and I cannot arrange spacing outside of these. Is there a way to edit text without having to revert to Word documents each time?

No. PDF files were never meant to be edited in such a way, so you have to make do with the options you have.

It's actually better to export to Word, or some other editable format, edit the file there, and then convert it back to PDF than to edit the PDF file directly.
