So, I got the Photography plan. It tells me to pay monthly for a year, or prepay it. I know I can cancel it at the end of a month, but I was wondering if I could just buy a month at a time? By that I mean, I buy one month, then If I want to, I pay the next month with the same process instead of Adobe charging me monthly. Thanks.

Those are the only two options for the Photography Plan.

Photography plan is available only under annual contract which means that you'll be charged for penalties if you cancel before the end of the year ..

To be able to cancel when you want ,you need to buy monthly Photoshop subscription ( Not annual paid monthly ).

The month-to-month plan costs more per month.  But you can cancel anytime without a penalty.

USD $19.99 / month

Photography Plan (PS + Lightroom)  Annual contract, paid monthly

USD $9.99  / month

IMO, the Photography Plan is the best choice by far.
