Hi,
I've just tried to install an ISO color profile to my color profile library ( --> Library / ColorSync / Profiles ) but when I tried to assign the profile in photoshop, it is nowhere to be found. Am I missing something?
Here's a link to the ICC profile file I'm trying to install: Dropbox - ISOcoated_v2_300_eci.icc
Any advice would be greatly appreciated!

What can I say? I didn't have any problems installing it - but then, in Windows it's just a right-click > Install away. I honestly don't know how this is done in Mac. You may in any case have to scroll down a bit - it's not listed in the top section, but further down.

Just for future reference…this is one of those things that is actually more difficult on the Mac. Unlike Windows, there is no right-click or double-click installation. A color profile (that did not come with an installer) must be manually moved into the correct Library configuration folder where macOS looks for profiles, at the path the user listed above. And, macOS hides the user Library folder by default!

Further to the reply from @Conrad C , there are at least 4 common locations where ICC profiles are stored on the Mac!
There is the local user-level library (generally the preferred location, unless there are multiple users):
~/Library/ColorSync/Profiles
/Users/username/Library/ColorSync/Profiles
There is the system-level library:
/Library/ColorSync/Profiles
Then there is the system-level Adobe location (best reserved for profiles installed by Adobe software):
/Library/Application Support/Adobe/Color/Profiles/Recommended
/Library/Application Support/Adobe/Color Profiles
