I've prepared a form in Acrobat DC Pro that I need to send out for signature.  However, the form has two signature spots, but only one can be chosen by the signer.  Can this be done without and scripting/programing such as Java?

You should consider for legal reasons that, if using digital signatures, they always apply to the whole file. Signature locations are of no relevance at all. Make sure you aren't requiring people to sign, in the unwanted part, something unsuitable.
