I am changing the capture time on batches of scanned photos. I select the photos, Go to Metadata, edit capture time and change the time. While they are still selected I Command S to save them and when I immediately go back to check not all of the dates have changed. Some of the dates are the next day some are wild dates some are back to the beginning. What am I doing wrong?

Thank you, basically Lightroom can't do it. I appreciate the answer, I'll keep tagging four at a time. Is it really that hard a thing for Lightroom to program in?

No, it's pretty easy. Adobe hasn't paid much attention to this feature request because LR has always been focused on handling the output from digital cameras, and it seems that only those of us managing scans want the ability to set a batch of photos to the same time. Add your me-too vote to the feature request and details of why you want it, which will make it a tiny bit more likely that Adobe might implement the feature.
I'll keep tagging four at a time.
That other post lists a plugin that does what you want.
