I shoot portraits on a even background then during post I select the background and add lighting effects. The effect is uneven. There are concentric circles in the gradation. Is there a fix for this?

This is called "banding" and you use Photoshop's noise filters to reduce it.

That background gradient is as near B&W as makes no difference. If you toggle through all three channels, you'll see no difference in any of them regards the background. That effectively cuts your available steps fro 256x256x256 to just 256, so you need to work in 16 bit. Actually, while I say this applies to B&W, it is true of any image where just one channel is active, like with a subtle gradient in a blue sky.
