To change appearance of all button instances - Select Symbol, Modify > Edit > Edit Symbol and then change the PI Properties of your symbol parts.
You should have a look at Rich Symbols as they provide more control - you can find some details here.
If I go Modify/ Symbol/ Edit Symbol I get to the 9 slice scaling guide, so i can stretch stuff but not much else. Is that what PI Properties are?

Yes - When you see the 9 Scale item, you are in 'Edit Symbol Mode'. So from there you can, select individual Layers of your Symbol and adjust PI settings from there.
As an intro to Rich Symbols (as per links mentioned above), hit F7 to open the Common Library Panel. Expand the 'Win' Folder (double click it) and drag a single 'Button' instance onto the Canvas.
Select this Button Symbol instance on the canvas, and go Window > Symbol Properties to open its panel. Adjust any of the properties for this symbol instance.
Hit F11 to toggle to the Common Library. This shows all active Symbols in your document. You should see the 'Button' one. Drag/Drop the button Symbol from the Common Library a few more times onto the canvas. Select another one on the canvas, and adjust it's properties in the Symbol Properties Panel. And so on for however many instances of the same symbol present.
The benefit of using Rich Symbols - you can interact with individual items (title, shape etc) and have them different for each instance.

I understand that with a rich symbol you can make a property editable so you could have the button look the same but have the text change colour for different instances. I think this will be a really useful thing for me to learn but at the moment i cant figure out how to change the appearance of the button while it is still a work in progress.
I want to make big changes to the button while i am still designing it. I want to be able to add/remove elements to completely change the design, and later Ill be using the rich symbol feature to make the small changes between the different instances.
I think with my initial question I made it sound like i wanted to know how to make small changes to distinguish the different instances on the page, but actually I want to be able to experiment with different designs for the button, and see all the instances update on the page.

If not, making big changes is not that hard.
All you have to realize is this.
When you convert some objects (text, shapes etc) to a Symbol (in your case, a button), all those objects get 'condensed' into a single Symbol object. You interact (make changes) with the individual symbol elements (text, shapes etc) by entering Edit Symbol Mode (as mentioned above).
Just Double Click the Symbol on canvas, make changes, and click Done (FW3)/Home Breadcrumb icon(FW4).
Oh, i didnt realize all the normal affects, etc work in the edit symbol mode, thanks for staying with me!
