Hey guys,

I'm trying to figure out how to go through my entire sequence for all stereo audio clips and turn off one of the channels, so they're all mono. Is that possible with Premiere Extendscript?

No, that is not possible today. ExtendScript can delete clips from sequences, but not re-interpret them (which includes changing their channelization).
