After fixing image resolution at 300 (like we need for our annual) our images are coming out at insane sizes like 70 MB, they won't upload to Jostens. Please help.

What are the dimensions in pixels of a typical photograph after you've resized it (Image > Image size will tell you) and what size in inches do you want the images to print?

And what is the original dimension and dpi? If your images are originally at 72 or 100, upscaling them to 300 dpi may meet the tech requirements but not improve the image quality (in fact, likely decrease it).

These images are hugely oversize, at the moment this one, for example, is optimised for printing at 72" x 48".
Scale them down to the size you want to print them.
If you have lots of photographs you can use the Photoshop Image Processor script to scale them in bulk.

72, but my Sponsor needs them to be at 300. Is there any way to decrease the file size but keep the image at 300?

I varies and we won't know until we're working on the actual page. But the maximum size is going to be the size of a coffee table book,

At a resolution of 300PPI these would print at 17" x 11", so if you were printing one image a page you'd need them to be reduced by about half. Does that make sense?
