Apologies, I'm very new to this program but the idea fascinates me.  If I shoot a 360 degree product with around 50+ angles/degrees, can I import that into dimensions and use that as my model with any accuracy?

No, at this time we don't have any type of "2D to 3D" conversion for images.  There are some tools out there that let you capture real-world items with a camera (photogrammetry).  Adobe does not have anything like this yet though.  For Dimension you'll need to have a 3D model to import.
