different types of signatures

I use Acrobat DC. When I sign a document, sometimes it comes with the red acrobat logo, with kinda official appearance, (and I think it says digital certificate) and it has a date stamp.

But sometimes it just writes my name and I don't have the previous option.

What triggers this choice? How can I control that? How can I force it to always sign with the digital certificate?

Thanks @Bernd_Alheit. Very clear how I can control that.

It does solve my problem, but I am still not getting the rational behind these 2 features.

Just for understanding, why are there these 2 different methods and why sometimes, even the "Fill & Sign" menu brings a certificate signature into the document.

"Fill & Sign" doesn't use certificates.

May be that you have used a form with a signature field.
