How can i turn off the insane automated palettes docking. When i touch the wrong place, i dont want it to go crazy and rearrage itself into something difficult to use.

Perhaps you could be more specific about what's going wrong, and maybe support it with screen grabs.

If you've got the screen space you can just drag the panels out of their default positions and put them where you want them.  This works best with two monitors.

When you get your workspace set up just the way you like it, save it as a named workspace.  Then if something goes awry, you can always do Window - Workspace - Reset xxxxxx (where xxxxxx is the name you gave your preferred workspace).
