Hi David, welcome to the forum.
Having to quit and relaunch often means a display driver fault, and since Photoshop CS6 is new and relies on an unprecedented amount of GPU support, it's important to have up-to-date display drivers.
What video card do you have? Have you been to the web site of the card maker to download/install the latest display driver they have released?
Display driver updates fix many problems.
Out of curiosity: Can you still move the dialog window?
To test Noel’s suspicion you could also try turning off »Use Graphics Processor« in the Performance Preferences and restarting Photoshop, I guess.
As the OP mentioned »dialog« I assumed they meant the dialog as raised via Image > Curves etc. but maybe they meant the Properties Panel indeed.
Edit: Actually the title refers to Adjustment Layer specifically so I’ve just not been paying close enough attention …
