By using HTTPService class (see http://livedocs.adobe.com/flex/201/langref/mx/rpc/http/mxml/HTTPService.html) you can execute a db query script which will send the data to flex. The data can be any of object|array|xml|e4x|flashvars|text formats.
You can them handle it however you want to populate whatever flex objet.

You should use an MVC framework and populate the model with the data from the server. For example, you can bind a chart dataprovider to a property in the model and have the chart update automatically whenever the model data changes, via data binding.
Cairngorm is a micro-architecture including MVC as well as other patterns for invoking services.
You can start out just binding a dataprovider (ie. ArrayCollection) to the result from CF, and then you can use that one dataprovider for whatever is appropriate (list, combo box, etc).
