Yes - Here it is supposing that you have an image on your stage:
I have a function that calls images (image) numbered from 0 to 10 for example and text (info) in an array:
// update image
sym.$("photo").attr("src", "images/image" + index +".jpg");
// update text
and then a button that calls the function to update the text and the image.
index = 0;

This solution works if you want to replace an image, but what about updating an existing image?
I have a draft animation and I've tweaked the image assets in photoshop. Do I have to recreate the animations to use the updated image? I guess I could rename the new image and then replace it, but there's got to be a better way.
Replacing is clear. But if the size of the image has changed, is there anyway to automatically get the new dimensions of the image to properties? It's kinda hard to check the size from explorer and the manually write it to properties...
If you need to update, just save the image to to same folder and edge will ask if you want to update, just tried this.

I've updated my image (the content and the size), and edge doesn't recognize the size change. Plus, I'm not clear that if I manually edit the dimensions in the EDGE properties panel, is it correcting my new images aspect ratio or stretching the old image inappropriately to the new dimensions?
Yes you can edit the sizes in edge after you update your files -in symbols you have to open the symbol to retype the sizes. When you change an image in a symbol you also have to open it in order for the image to update even if you do not want to change the size, or close the comp and reopen it.
Of course you can delete you image and drag it again and it will be the right size.
