I am on Windows 7, and when I manually add images (copy/paste or drag/drop) them to the project/images folder (via Win Explorer), Edge Animate > Assets > Images automatically updates and shows them.
I'm win 7 also and it's not doing that for me. I will try to repro
OK, this is what I found...
When I noticed this originaly I had been working on some code and created a simplified version for debuging. The images I had in my "images" folder were all "found" when the project was created but they had rather long file names so, in explorer, I created copies and gave them very short names, like image1.jpg etc. to make it easier to work with them in code. When I went back to the project none of these newly created files were pick-up by EDGE. Also If I drag/drop a new file to the "images" folder its not picking it up either so I'm not sure what going on.

Works fine here.
Are you sure you are working in the /images folder that directly resides one-subfolder under the root project?
I just tested a renaming of a file within /images (via Win Explorer), and when I do it , 'Edge Animate prompts me that a file deletion has occurred? Do you want to reload the changed files?'
And it automatically does so.
if you rename the images they will not be updated and you will probably get an error because Edge will not see the old images. You will need to replace the images in Edge too because they are considered as new images.
I found the problem....
operator error. my bad.
I had done several "save as" with this project in differnt project folder sets and I was actualy working out of a different folder than what I thought I was which is why the changes I was making in explorer weren't showing up. DUH. It's all straight now and working well.
Joel - I have done that a few times, as well
Happened to me too! Good luck on your project.
