Unable to select paper size when printing to PostScript file

I am trying to Print Booklet to a PostScript file so I can then convert it to a PDF in printer spreads. I do not have Acrobat Pro, so I'll be using Apple Preview for the conversion. My problem is that I can't seem to select a paper size. My document is 9" x 9". My output is coming out at 8.5" x 11". Please see attachments. Thanks in advance for the help!

I would recommend to use postscript at all and also not to use the booklet funktion. You can print out a booklet from single pages out of Acrobat/Reader and professionell printers do their settings from sngle pages too and don't want imposed files.

Use the export to PDF function, but avoid eps, postscript.

Please avoid also Apple's built in Preview and converter. It creates either non-standardized pdf or has a lot of viewing problems. Who works with pdf should rely only on Adobe's Acrobat or Reader.

And btw why do you need a given paper size?
