I have another question. I have a gradient within the mapped art (like if the ribbon above was instead filled with a gradient). When mapping it, AI tells me that the gradient has to be rasterized. However, I need this to be scalable. Is there a way to avoid rasterizing the gradient in the mapped art?

Actually to solve the initial problem "scale strokes and effects" should do. No need to expand the stuff.
When you expand however, the mapped art with gradient will in fact be converted to pixels. If you don't expand the art, it will stay "live" and changing the document raster resolution to a sufficient value will be enough. WHen you need a different size, scale it and/or change the resolution again.
