Since PhoneGap Build uses Apple's standard development process to build applications, you will need to sign up for their developer program to build iOS applications on PhoneGap Build. You will also need a Mac to configure your certificate and provisioning profile.
Can you check this document Building for OS, and let us know if you found it helpful?
You need to download the SDK for Android & XCode for iOS (Bundles iOS SDK) first and point DW to the stored SDK location so it can emulate/ build files for you:
Android SDK: http://developer.android.com/sdk/index.html
Note: You need an Apple Developer account (fees apply) to be able to use PhoneGap to package for iOS. Also, you should be on a Mac to be able to run XCode - and a signing key for your iOS app should be generated from a Mac OS machine.
i DO NOT SEE iOS FILE FIELD TO CHOOSE SDK OF APPLE, i HAVE XCODE OLD & 10.7.4 LION....How appear it pref?
In other words if defaults are webOS and Android to appear the others i must do from Preferences?
this from windows PC, only WebOS & Android seem... well?

for an app, it needs to be packaged in a format that the
target platforms understand. As long as you set up the
Native Application Settings as described in “Setting up a
Dreamweaver Site for a Native App” earlier in this chapter,
you’re just a couple of clicks away.
